Ingredients
1 medium onion (chopped)
2 tablespoons organic extra virgin olive oil
2 teaspoons curry powder
1/2 teaspoon ground ginger
4 cups vegetable or chicken broth
2 medium sweet potatoes (peeled and cut into small pieces)
1/2 cup of your favorite “milk”
Directions
Saute onion in olive oil until soft
Add curry powder and ground ginger and cook 2 minutes longer
Add broth and sweet potatoes
Simmer until soft
Puree using an immersion blender or food processor
Add milk
Season to taste
